My favourite salad is by @theplantifulsisters, Angela + Deborah, and I asked them to collaborate with Lemonberry to do a reel to share this amazing salad with you! They agreed!!! And here it is. I hope you love it as much as I do. I keep telling them to make a vegan/plant based cookbook bc I love all their recipes ❤️ Make sure to you go to their feed to check those out too :)
Here is their ‘Thai-Inspired Mango Salad.’ Super colourful with a zesty ginger dressing! Sweet and spicy all in one bowl! Recipe below.
2 mangoes (preferably a bit under-ripe), cut into matchsticks
1 red bell pepper, cut into matchsticks
1 small head red cabbage, sliced thin (~ 2 cups)
2 green onions, cut on diagonal
1 green jalapeño pepper, thinly sliced (optional)
50 grams sunflower micro greens (~1.5 cups)
1/2 cup chopped raw cashews
1/3 cup chopped cilantro (optional, if you like cilantro! One of us don’t)
Zesty Ginger dressing:
2 tsp grated ginger
1 clove garlic, minced
1/2-1 tbsp maple syrup
1/3 cup avocado oil
Juice from one large lemon (~3 tbsp)
1 tbsp apple cider vinegar
Sea salt and pepper
Steps: Whisk together all dressing ingredients. Then add all salad ingredients to a bowl and toss with dressing. Taste and adjust seasoning as desired. Enjoy! 😋 ..ps. this serves 4-6 people.
