BBQ Season: What we're eating, listening to and wearing

The long weekend may be over, but BBQ season is officially on.

We pulled together a few things we’re in the mood for right now: an easy summer burger recipe, a playlist for warm evenings outside, and a few outfits that work for backyard dinners, cottage weekends, and patio nights.

Smash Burgers with Caramelized Onions & Pickles

Simple. Messy. Very worth it.

Ingredients

• Brioche buns
• Ground beef
• American cheddar
• Thinly sliced onions
• Dill pickles
• Burger sauce
• Lettuce

Quick Burger Sauce

• ½ cup mayo
• 1 tbsp ketchup
• 1 tsp mustard
• Splash of pickle juice
• Black pepper

Mix together and refrigerate while cooking.

Directions

Cook onions in a pan over medium-low heat with a little oil or butter until soft and caramelized. Set aside.
Divide beef into 4 loose balls. Don’t pack them too tightly or they lose that crispy edge magic. Science. Meat science.
Heat a cast iron pan or flat-top grill until very hot. Place beef balls down and smash firmly with a spatula.
Season with salt and pepper. Cook 2–3 minutes until crispy around the edges, then flip.
Add cheese immediately after flipping and cook another 1–2 minutes.
Butter and toast the brioche buns.
Assemble with burger sauce, lettuce, pickles, burger patties, and caramelized onions.

Serve with fries, chips, or whatever’s left in the snack cupboard after the long weekend damage.
