Ingredients:

● 1 medium butternut squash, peeled and cubed

● 1 small onion, chopped

● 2 cloves garlic, minced

● 4 bone-in, skin-on chicken thighs 2 medium sweet potatoes, cubed

● 1 apple, sliced

● 1 cup Brussels sprouts, halved

● 2 tablespoons olive oil

● 1 tablespoon maple syrup

● 1 tablespoon whole grain mustard

● 1 teaspoon fresh or dried rosemary

● Salt & pepper


Instructions:

1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment.

2. In a small bowl, mix olive oil, maple syrup, mustard, rosemary, salt & pepper.

3. Toss veggies and apple in half the glaze. Spread evenly on the sheet pan.

4. Rub the remaining glaze onto chicken thighs and nestle into the veggies.

5. Roast for 35–40 minutes or until chicken is golden and cooked through.

● 12 oz (340g) pasta of choice (penne, rigatoni, or tagliatelle)

● 1 tablespoon butter or olive oil

● 2 garlic cloves, minced

● 1 cup pumpkin purée (not pumpkin pie filling)

● ½ cup heavy cream or half-and-half

● ½ teaspoon ground sage (or fresh)

● ½ cup grated parmesan

● Salt & pepper to taste

● Optional: pinch of chili flakes or nutmeg


Instructions:

1. Cook pasta according to package instructions. Reserve ½ cup pasta water.

2. In a skillet, heat butter and sauté garlic until fragrant (about 1 min).

3. Stir in pumpkin purée, cream, sage, salt & pepper. Let simmer for 5–7 minutes.

4. Add cooked pasta, parmesan, and splash of pasta water to loosen sauce if needed.
